Indian Spiced Potato Fry is a simple recipe that my Mum used to serve us with her Bengali Khichdi. Don’t be fooled by its simplicity though. It is so delicious. The spiciness of the potatoes from the dry red chilies, the flavor of nigella seeds and the caramelized onions- it is just a perfect blend of flavors. YILEDS: Serves 3
Ingredients
- Red Potatoes 4-5, thinly cut
- Onion 1, thinly sliced
- Vegetable oil 3 tbsp
- Nigella seeds 1 tsp
- Cumin seeds 1 tbsp
- Dry red chilies 2, broken
- Salt to taste
- Turmeric 2 tsp
- Roasted cumin powder 2 tsp
- Red chili powder 2 tsp
Method
- Heat oil. Put in nigella seeds, cumin seeds and red chilies. Let it start to splutter.
- Add onion and potatoes.
- Season with salt, turmeric, cumin powder and red chili powder.
- Turn the heat to medium. Cook uncovered striking intermittently till the onion starts to caramelize and the potatoes are cooked completely.
- That’s it, you’re done.
