Fusilli Pasta Salad

Made with organic whole durum wheat flour, this fusilli pasta has a whopping 56 g of whole grain per serving. Eat this pasta salad hot or cold. This makes for a delicious packed lunch or an easy weeknight dinner @sarchakra

YIELDS: Serves 4-5

Ingredients

  • Simply Balanced Whole Wheat Fusilli 16 oz
  • Ricotta Arugula Pesto ½ cup (Baguette with Ricotta Arugula Pesto)
  • Olive oil 4 tbsp
  • Juno bites 1 cup, cut into halves
  • Mozzarella balls
  • Black pepper 2 tsp
  • Broccoli florets 1 cup
  • Basil fresh, a few sprigs

Method

  • Cook pasta according to box directions. Drain and rinse.
  • In a bowl combine arugula pesto, mozzarella balls, Juno bites, broccoli florets, pepper and olive oil.
  • Mix in cooked pasta. Toss and serve with freshly torn basil.
