Greek Salad

One of the salads that our local Mediterranean eatery serves with lamb kofte is a delicious and refreshing Greek salad. This salad is a homage to that. It is absolutely scrumptious even though it is pretty darn simple. The good news is, it takes just a few minutes to make it but tastes so refreshingly delicious. The feta gives a nice salty balance to the sweetness of the cherry tomatoes and the fresh herbs is a must. Do try it and let me know what you think @sarchakra

COOK TIME: 0

YIELDS: 3

Ingredients

  • Mixed cherry tomatoes a small handful
  • Mini cucumber 3, chopped
  • Red onion ¼, chopped
  • Parsley torn for garnish
  • Olive oil 2 tbsp
  • Lemon juice 2 tbsp
  • Sea salt a pinch
  • Black pepper 2 tsp
  • Feta cheese crumbled
  • Olives (optional) for garnish
  • Pickled peppers (optional) for garnish

Method

  • In a small bowl put olive oil, lemon juice, sea salt, black pepper. Mix.
  • Add the chopped cucumber, cherry tomatoes, red onion, pickled peppers and olives.
  • Pour the dressing on top.
  • Add torn parsley. Sprinkle crumbled feta. Mix gently.
  • Serve immediately.

Notes

One alternative to the salad dressing may be a pomegranate dressing or a reduced balsamic dressing.
