Panch Phoroner Chocchori

Panch Phoron is a combination of nigella seeds, fennel seeds, celery seeds, fenugreek and mustard seeds and that is what forms the basis of the flavor of this recipe. It is a simple recipe that tastes so good with rice or luchi or puffed Indian bread. Chocchori is a dry vegetable curry. @sarchakra

Ingredients

  • Eggplant 1 cup
  • Potato 1 cup
  • Cabbage 1 cup
  • Sugar snap peas ½ cup
  • Carrots ½ cup
  • Squash ½ cup
  • Red chili pepper 1
  • Whole red chilies 4
  • Green chilies 3
  • Mustard oil 2 tbsp
  • Celery seeds a pinch
  • Fenugreek seeds a pinch
  • Fennel seeds 1 tsp
  • Nigella seeds ½ tsp
  • Toasted cumin seeds 1 tbsp
  • Mustard seeds 1 tsp
  • Turmeric 1 tbsp
  • Ghee 1 tbsp
  • Sugar 1 tbsp
  • Salt
  • Bengali Garam masala powder
  • Flour 1 tbsp

Method

  • Heat mustard oil. Add whole red chilies, fenugreek seeds, fennel seeds, nigella seeds, celery seeds, mustard seeds. Sauté for a few seconds.
  • Add mixed vegetables. Add salt and turmeric.
  • Sauté for a few minutes. Add 1 cup of water. Cover and cook till the vegetables are cooked.
  • Add toasted cumin seed powder, ghee, Garam masala powder and sugar.
  • Add flour. Mix everything.

Add sugar, ghee and Bengali Garam Masala
