Fresh vegetables for the week : one tip for using fresh leafy vegetables and herbs- always wash and clean them before storing them away. Wrap in paper towels and put them in ziplock bags. Although it’s easy to just put everything in the fridge, some like tomatoes (yes o know it is technically a fruit) need to be stored at room temperature away from direct sunlight. Potatoes stay 2-3 months in a cool dark cupboard (although truth be told, they don’t last very long in our house!). Onions on the other hand should be stored in a cool dry and dark place to keep them from sprouting. While celery stays 1-2 weeks in the fridge, broccoli is better eaten within 3 days. Did you know you should store vegetables and fruits separately? Many fruits give off a natural gas called ethylene that helps them ripen, but can cause many vegetables spoil faster. When I have a huge batch of fresh spinach that I do not need straight away, I triple wash them, chop them up and pop it in the freezer. That way when I need them, it can go straight into the dish. Keema Matar- simple no-gimmicks home food. No fancy ingredients- just the usual onion, ginger, garlic and dry roasted spices made at home to give that amazing burst of multilayered flavor. Green peas adds some fiber to the dish and is best served with pau which was also homemade. Some days more fuss is made with food than other days.
