Greek Flatbread Cheesy Pizzas

Greek flatbreads are a quick and easy way of making pizzas without the time restraints of building a pizza crust from scratch. Within 15 minutes, lunch or dinner is ready at the table. Who doesn’t like that? This is a very ‘cheesy’ recipe. It uses a total of 5 different kinds of cheeses. Along with the more common semi-hard cheddar cheese and Monterey Jack cheese we have Feta Cheese, a brined curd white cheese from Greece made from a mixture of sheep and goat milk as well as Quesadilla cheese and Asadero cheeses.

The Spanish word for cheese is queso. Queso Quesadilla originated in the state of Sinaloa in Northwestern Mexico. The versatile, rich, creamy, smooth, semi-soft white cheese makes for delicious quesadillas and hence its name. It is also great for pizzas, queso fundido, chili cheese fries, baked potatoes, or for cheese-topped baked pasta dishes. Asadero in Spanish means baking, which indicates that Asadero was in fact made especially for cooking. Developed in Northern and Central Mexico, it is a creamy, smooth, mild tasting, velvety cheese, perfect for melting in roasted dishes or quesadillas. Lastly the use of Feta Cheese gives the dish that distinctive tangy and salty finish to the dish. YIELDS: Serves or makes 4

Ingredients

  • Greek flatbread 4
  • Marinara
  • Monterey Jack cheese 3 tbsp
  • Cheddar Cheese 3 tbsp
  • Quesadilla cheese 3 tbsp
  • Asadero cheese 3 tbsp
  • Basil 1 tbsp
  • Red pepper ¼, sliced
  • Green pepper ¼, sliced
  • Onion ½, sliced
  • Feta cheese 2 tbsp, crushed

Method

  • Heat oven to 350°F.
  • Spread 2 tablespoons of marinara sauce on each flatbread.
  • Top with Mexican cheese, sliced onions, sliced red pepper, green pepper add chopped basil.
  • Cook in the oven for 8 to 10 minutes till the cheese melts.
  • Serve with fresh basil and crumbled feta cheese.
