Sweet Plantain Fritters

This vegan, paleo friendly recipe is a simple, quick and an absolutely delicious crunchy treat. I grew up in India with my Mum cooking ripe plantain this way especially when we wanted something sweet. It hits the right spot and is very satiating indeed. PREP TIME: 2 mins

COOK TIME: 5 mins

YIELDS: Serves 3

Ingredients

  • Plantain (ripe) 1, mashed
  • Rice flour 2 tbsp
  • Sea salt a pinch
  • Self raising flour 2 tbsp
  • Jaggery 2 tbsp
  • Sweetened coconut 2 tbsp
  • Cinnamon powder 1 tsp
  • Nutmeg ½ tsp, grated
  • Oil for frying

Method

  • Put all the ingredients in a bowl. Mix everything to a smooth consistency.
  • Heat oil. Take small portions out of the batter and drop into the oil. Do not overcrowd the pan. Keep the flame at medium.
  • Fry till golden on all sides. Drain.
  • Repeat for the rest. Serve immediately.
