This vegan, paleo friendly recipe is a simple, quick and an absolutely delicious crunchy treat. I grew up in India with my Mum cooking ripe plantain this way especially when we wanted something sweet. It hits the right spot and is very satiating indeed. Do try it and tell me if you agree @sarchakra
PREP TIME: 2 mins
COOK TIME: 5 mins
YIELDS: Serves 3
Ingredients
- Plantain (ripe) 1, mashed
- Rice flour 2 tbsp
- Sea salt a pinch
- Self raising flour 2 tbsp
- Jaggery 2 tbsp
- Sweetened coconut 2 tbsp
- Cinnamon powder 1 tsp
- Nutmeg ½ tsp, grated
- Oil for frying
Method
- Put all the ingredients in a bowl. Mix everything to a smooth consistency.
- Heat oil. Take small portions out of the batter and drop into the oil. Do not overcrowd the pan. Keep the flame at medium.
- Fry till golden on all sides. Drain.
- Repeat for the rest. Serve immediately.
