Sweet Plantain Fritters

This vegan, paleo friendly recipe is a simple, quick and an absolutely delicious crunchy treat. I grew up in India with my Mum cooking ripe plantain this way especially when we wanted something sweet. It hits the right spot and is very satiating indeed.
