This is a super healthy recipe with bulgar wheat, beets, feta cheese, mint and pistachios. It is full of bold flavors and is sure to please your taste buds @sarchakra

Ingredients
- Beets 2, boiled and grated
- Bulgar wheat 1 cup
- Red onion 1, small, chopped
- Vegetable stock 2 ½ cups
- Black pepper 2 tsp
- Olive oil 2 tbsp
- Feta cheese crumbled 3 tbsp
- Juice of ½ a lemon
- Fresh mint leaves torn
Method
- Heat oil. Sauté onions till translucent. Add bulgar wheat. Cook for a minute or two. Add the grated beets. Add vegetable stock and pepper. Cover and cook till done. Let it rest after it has cooked for 10 mins for any additional liquid to be soaked into the grains.
- Squeeze fresh lemon juice on the cooked wheat and mix.
- Serve on a plate. Top with crumbled feta cheese and mint leaves.
