Bhutta (Roasted Corn on the Cob)

Indian roasted corn on the cob is an easy and quick snack especially a favorite during the monsoon season in India. Bite into the charred and soft kernels to release that mustard and lemony flavors. Healthy recipes never tasted this good, right? @sarchakra

SERVES: 2

Ingredients

  • Corn on the cob 4
  • Mustard oil 2 tbsp
  • Paprika 1 tbsp
  • Salt
  • Juice of 1 lime
  • Coriander leaf 1 tbsp, chopped

Method

  • Heat mustard oil in a cast iron pan. Put the corn cobs in the pan.
  • Roast the corn turning intermittently till all the kernels have changed colour and turn black and burnt. Brush with a little more oil if needed to give that golden hue.
  • Put corn on a serving plate. Sprinkle with paprika powder, lime juice, salt. Top with some chopped coriander leaf.
The sweetcorn I used
Put the corn on the cast iron pan on the seasoned pan
Cook all around till charred
Serve with paprika, lime juice, salt and coriander leaf.
Bhutta is ready
Serve with some mustard oil and lime slices
