Chicken Chowmein

Chowmein or Chinese stir-fried noodles, is also a very popular street food in India. This recipe uses store bought rotisserie chicken. Did you know you can make a ton of recipes with rotisserie chicken? From fried rice, tacos, sandwiches, soups, salads, healthy stir fry, casseroles to bowls- the choice is endless. This is a super quick recipe especially for kids and tastes awesome. This can be eaten as a quick lunch too @sarchakra

PREP TIME:10 mins

COOK TIME:15 mins

YIELDS: Serves or makes 3

Ingredients

  • Noodles 1 package
  • Sesame oil 4 tsp
  • Chicken 1 cup thinly sliced
  • Garlic 1 tbsp
  • Pepper 2 tsp
  • Fish sauce 2 tsp
  • Soy sauce 1 tbsp
  • Salt
  • Sugar 1 tsp
  • Rice vinegar 2 tsp
  • Eggs 3

Method

  • Boil noodles according to box directions. Drain and set aside. Mix in 1 tsp oil into the noodles.
  • Beat eggs in a bowl and season with salt and pepper. Heat a pan. Add 1 tsp sesame oil. Pour the eggs. Roll the pan around so the egg can spread out. Fry on a medium heat till done. Remove. Cut into strips.
  • Heat 2 tsp sesame oil. Add garlic. Add chicken. Season with salt and pepper. Add in soy sauce, rice vinegar, sugar and fish sauce. Stir fry on a high flame.
  • Add in noodles. Check the seasoning. Stir to combine. Turn the heat off. Serve the noodles with the fried egg strips.

I used two different kinds of noodles but using any or either is fine.
