This is a super quick recipe for lunch or kids’ meals. You can make it spicy if cooking for adults or have it as is. I did this for my son who doesn’t like spicy food but if I was cooking this for myself, I would add in some green chillies, fresh mint and coriander. If you already have leftover rice this comes together even quicker @sarchakra

COOK TIME: 30 mins
YIELD: Serves or Makes 2-3
Ingredients:
- Large raw shrimp 8 oz
- Bay leaf 1
- Cinnamon 1 inch piece
- Black cardamom 1 crushed
- Green cardamom 2
- Cloves 2
- Black pepper powder 1 tbsp
- Mace powder 1 tsp
- Nutmeg 1 tsp
- Turmeric 2 tbsp
- Cumin seeds 1 tbsp
- Frozen or fresh peas 1 cup
- Basmati rice 2 cup (see notes)
- salt
- Vegetable oil 2 tbsp
Method:
- If cooking rice from scratch, wash rice a few times till the water runs clear. Cook rice with double the water for 12-13 mins on low heat, covered. Note: 1 cup raw rice makes 3 cups of cooked rice. Use 2 cups for the pilau. Reserve one. If you already have 2 cups of leftover rice, omit Step 1.
- Wash and clean shrimp. Rub salt and 1 tbsp turmeric on shrimp.
- Heat oil. Temper with bay leaf, cinnamon, black cardamom, green cardamom, cloves and cumin seeds. Add shrimp and cook for a minute till it turns pink. Do not overcook.
- Add cooked rice, frozen peas, 1 tbsp turmeric, salt, black pepper, mace and nutmeg.
- Cook covered on low heat for 3-4 mins. Serve.
