Soya Nuggets Curry

Soy or Nutrela nuggets are an important component of Asian diets. Soy is made into many products like soy flour, soy protein, tofu, soy milk, soy sauce, soybean oil along with soy nuggets. Soya Nuggets or Soya Chunks is commonly known as vegetarian meat. 100 g of Nutrela chunks has 13 grams of fiber and 52 grams of protein. Soya chunks has more protein than eggs, meat and milk. This is a delicious way to eat soya chunks. It is flavorful and great with rice @sarchakra

Ingredients

  • Soya nuggets, 2 cups
  • Potatoes 2, chopped
  • Turmeric 1 tbsp
  • Salt to taste
  • Vegetable oil 2 tbsp
  • Bay leaf 1
  • Cumin seeds 1 tbsp
  • Caraway seeds 1 tsp
  • Tomatoes 2, chopped
  • Asafetida a pinch
  • Coriander powder 2 tbsp
  • Red chili 1 tbsp powder
  • Crushed black pepper 1 tsp

Method

  • Boil soya nuggets with chopped potatoes, salt, turmeric and 1 cup of water in the pressure cooker for 1 whistle.
  • In a pan heat oil. Temper bay leaf, cumin seeds, caraway seeds, asafetida, black pepper and red chili powder for a few seconds before adding in chopped tomatoes. Cook on high heat for a couple of minutes till the tomatoes are mushy and cooked.
  • Add in boiled soya nuggets and potatoes along with coriander powder. Cook till the sauce reaches desired consistency. Serve with basmati rice, roti or buttered toast.
