Ingredients
- Russet Potato 2, cut into wedges
- Salt to taste
- Parsley 2 tbsp plus for garnish
- Olive oil 4 tbsp
- Black pepper 2 tsp
- Garlic powder 2 tsp
- Onion powder 1 tbsp
- Smoked paprika 2 tsp
- Flour 2 tbsp
- Parsley 2 tbsp, chopped
- Feta cheese as needed, crumbled
Method
- Soak the potato wedges for 30 mins. Rinse and pat dry.
- Preheat oven to 400°F. Brush oil on a oven proof tray.
- In a bowl add olive oil, salt, pepper, parsley, onion powder, garlic powder, smoked paprika and flour.
- Toss the wedges in the mixture.
- Place on a prepared baking sheet with the skin side down.
- Roast in the preheated oven for 30-35 minutes or until the wedges are crispy and golden brown. Flip a couple of times.
- Sprinkle with chopped parsley and crumbled feta.
