Potato Wedges

Ingredients

  • Russet Potato 2, cut into wedges
  • Salt to taste
  • Parsley 2 tbsp plus for garnish
  • Olive oil 4 tbsp
  • Black pepper 2 tsp
  • Garlic powder 2 tsp
  • Onion powder 1 tbsp
  • Smoked paprika 2 tsp
  • Flour 2 tbsp
  • Parsley 2 tbsp, chopped
  • Feta cheese as needed, crumbled

Method

  • Soak the potato wedges for 30 mins. Rinse and pat dry.
  • Preheat oven to 400°F. Brush oil on a oven proof tray.
  • In a bowl add olive oil, salt, pepper, parsley, onion powder, garlic powder, smoked paprika and flour.
  • Toss the wedges in the mixture.
  • Place on a prepared baking sheet with the skin side down.
  • Roast in the preheated oven for 30-35 minutes or until the wedges are crispy and golden brown. Flip a couple of times.
  • Sprinkle with chopped parsley and crumbled feta.

Notes
