I’ve also used garlic confit which is a flavor bomb. If you do not have that, use regular garlic @sarchakra

Ingredients
- Chickpea spaghetti 1 package
- Extra virgin olive oil 4 tbsp
- Salt to taste
- Black pepper 2 tsp
- Zest of 1 lemon
- Juice of 1 lemon
- Garlic confit 2 tbsp
- Cottage cheese 1 cup
- Preserved lemon 1, thinly sliced
- Spinach 2 cups, frozen
- Parmigiana reggiano ¼ cup, freshly grated
Method
- Cook the spaghetti according to the instructions. In the last minute of cooking, add the spinach. Drain and reserve 1 cup of the pasta water.
- In the Vitamix add the pasta water, cottage cheese, salt, pepper, lemon zest, garlic confit, Parmesan and olive oil. Blitz for a few seconds till smooth.
- Add the sauce to the cooked spaghetti and spinach. Add the thinly sliced preserved lemon. Add the lemon juice.
- Check seasoning and add more if needed. Fold the spaghetti gently.
- Serve immediately.
