This is a simple fish dish I make for my son who loves fish. Freshly chopped tomato can be substituted for the canned tomato I used here and is even better. This recipe uses very little in terms of spices and its the simplicity that makes for a delicious home cooked meal @sarchakra

COOK TIME: 30 mins
YIELDS: Serves 4
Ingredients
For the Fish
- Cod 3 fillet
- Salt to taste
- Pepper 2 tsp
- All purpose flour ½ cup
- Oil for frying
For the Tomato Sauce
- Olive oil 3 tbsp
- Butter 3 tbsp
- Tomato sauce 1 can
- Salt to taste
- Pepper 2 tsp
- Garlic 4 cloves, chopped
- Basil a small handful, freshly chopped
- Peas 2 cups
Method
- Cut cod in thick pieces. Rub salt, pepper and all purpose flour on the fish.
- Heat oil. Fry the fish in batches till golden on all sides. Remove and reserve.
- Heat olive oil. Add the chopped garlic. Cook for a few seconds till aromatic.
- Add the tomato sauce. Season with salt and pepper. Add butter to the sauce. Turn the heat to low and simmer for 15 mins till the sauce thickens.
- Add the fried fish into the sauce. Put in freshly chopped basil. Add the peas. Let the mixture come to a simmer. Turn the heat off.
- Serve fish with spaghetti or linguine.
