Cod in Tomato Sauce

This is a simple fish dish I make for my son who loves fish. Freshly chopped tomato can be substituted for the canned tomato I used here and is even better. This recipe uses very little in terms of spices and its the simplicity that makes for a delicious home cooked meal @sarchakra

COOK TIME: 30 mins

YIELDS: Serves 4

Ingredients

For the Fish

  • Cod 3 fillet
  • Salt to taste
  • Pepper 2 tsp
  • All purpose flour ½ cup
  • Oil for frying

For the Tomato Sauce

  • Olive oil 3 tbsp
  • Butter 3 tbsp
  • Tomato sauce 1 can
  • Salt to taste
  • Pepper 2 tsp
  • Garlic 4 cloves, chopped
  • Basil a small handful, freshly chopped
  • Peas 2 cups

Method

  • Cut cod in thick pieces. Rub salt, pepper and all purpose flour on the fish.
  • Heat oil. Fry the fish in batches till golden on all sides. Remove and reserve.
  • Heat olive oil. Add the chopped garlic. Cook for a few seconds till aromatic.
  • Add the tomato sauce. Season with salt and pepper. Add butter to the sauce. Turn the heat to low and simmer for 15 mins till the sauce thickens.
  • Add the fried fish into the sauce. Put in freshly chopped basil. Add the peas. Let the mixture come to a simmer. Turn the heat off.
  • Serve fish with spaghetti or linguine.
