Roasted Acorn Squash

This is a super easy vegan and paleo recipe. A seasoned olive oil rub on the acorn squash rings and roasted on the oven and you’re done. The roasted squash is soft and almost creamy. Eat it as is or with some pasta or top it up for a hearty sandwich on some sourdough bread. @sarchakra

PREP TIME: 5 mins

COOK TIME: 35-40 mins

YIELDS: Serves 2

Ingredients

  • Acorn squash 3 large rings
  • Sea salt to taste
  • Olive oil 3 tbsp
  • Smoked paprika 2 tsp
  • Black pepper 2 tsp
  • Basil 1 tbsp, finely chopped

Method

  • Heat oven to 375°F.
  • Clean acorn swash. Scoop out the seeds with a thick spoon. Reserve the seeds for roasting later. Cut squash into rings.
  • Season a tray with a bit of olive oil. In a bowl add olive oil, smoked paprika, sea salt and cracked black pepper.
  • Brush the acorn squash rings with the seasoned oil on both sides. Bake for 25 minutes. Turn the rings over and cook the other side for 15 more minutes. Serve with chopped basil.
