Devil’s Food Cake Brownies

Although there is stigma attached to using store-bought cake mixes for desserts in culinary or foodie circles, where ‘from-scratch’ baking is seen as the gold standard, you have to appreciate the practicality of using ready made mixes for busy schedules. While recipes passed down through generations is a cherished tradition, mixes are a modern, convenience-driven shortcut. Granted that pre-made mixes often contain preservatives, artificial flavors, or stabilizers which can lead to the assumption that they are inferior to homemade recipes with fresh, wholesome ingredients, you can still add personal touches like extracts, mix-ins, or frostings to elevate boxed mixes and showcase creativity. So if you are in the mood for a decadent, fudgy dessert but want to skip the effort of starting from scratch, these Devil’s Food Cake Brownies are the perfect solution. Just add some simple pantry staples like oil, eggs, milk, vanilla extract and chocolate chips, to make irresistibly rich brownies that taste rich and chocolatey. The devil’s food cake base brings a deep chocolate flavor and moist texture, while the chocolate chips add bursts of gooey sweetness in every bite. This quick and easy dessert is ideal for weeknight treats, potlucks, or anytime you need a crowd-pleasing chocolate fix. It is the ultimate blend of convenience and indulgence @sarchakra

COOK TIME: 30 mins

YIELDS: Makes 16 pieces

Ingredients

  • Devil’s food cake mix 1 box
  • Vegetable oil ⅓ cup
  • Eggs 2, large
  • Vanilla extract 1 tsp
  • Milk ¼ cup
  • Chocolate chips 1 cup, divided

Method

  • Preheat your oven to 350°F (175°C) and grease or line an 8×8-inch baking pan.
  • In a large bowl, combine the cake mix, vanilla, oil, eggs, and milk until smooth. The batter will be thick.
  • Fold in ¾ cup of chocolate chips to evenly distribute.
  • Pour the batter into the prepared pan and spread it evenly. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out with moist crumbs (not wet batter).
  • Sprinkle the rest of the chocolate chips on the brownies.
  • Let the brownies cool completely before slicing into squares.

Notes

Add ½ cup chopped walnuts or pecans to the batter for crunch.

Once cooled, frost the brownies with chocolate ganache or cream cheese frosting for extra decadence.

Drizzle caramel sauce over the batter before baking and swirl with a knife for a caramel-infused treat.

Stir in ½ tsp of peppermint extract and replace chocolate chips with mint chocolate chips.

Drop dollops of peanut butter on the batter and swirl it through for a peanut butter-chocolate combo.
