PREP TIME: 10 mins plus for freezing
COOK TIME: 10 mins
YIELDS: Serves 10
Ingredients
- Pistachios 1 cup, shelled and unsalted
- Honey 2 tbsp
- Heavy whipping cream 2 cups
- Condensed milk 1 can (14 oz)
- White bread 2 slices, discard the sides and tear into pieces
- Ground green cardamom 1 tsp
- A handful of pistachios, coarsely chopped (for garnish)
- Dried rose petals for garnish
Method
To make Honey Toasted Pistachios
- Preheat your oven to 350°F (175°C).
- In a bowl, toss the shelled pistachios with honey until they are evenly coated.
- Spread the honey-coated pistachios on a baking sheet lined with parchment paper.
- Toast the pistachios in the preheated oven for about 10-12 minutes or until they turn golden and fragrant.
- Remove the toasted pistachios from the oven and allow them to cool completely. Once cooled, set aside for later.
For the Pistcahio Kulfi
- In a large mixing bowl, pour the heavy whipping cream, condensed milk, torn white bread pieces and ground green cardamom. Pulse until the mixture is smooth and well combined.
- Take the coarsely chopped toasted pistachios (set some aside for garnish) and add them into the kulfi mixture, and blitz one last time until they are evenly distributed.
- Pour the prepared kulfi mixture into popsicle molds or shallow cups.
- Insert sticks into each mold or cup. Cover the molds or container with plastic wrap or lid to prevent ice crystals from forming.
- Place the molds or cups in the freezer and allow the kulfi to freeze for at least 6-8 hours or overnight until firm.
- Once the kulfi is fully set, remove it from the freezer and let it sit for a couple of minutes to slightly soften for easy unmolding. Remove it from the molds or scoop it into serving bowls.
- Serve the kulfi as a whole or sliced. Garnish each serving with a sprinkle of the reserved toasted pistachios and crushed dried rose petals, adding an extra touch of crunch and visual appeal.
- Serve the Pistachio Kulfi immediately and enjoy the creamy goodness!
Notes
The cardamom’s fragrance will infuse the kulfi with a delightful essence.
If using popsicle molds, gently run warm water over the outside of the molds to loosen the kulfi.
