Ingredients
- Broccoli florets 1 head
- Olive oil 2 tbsp
- Salt a pinch
- Black pepper 1 tsp, freshly ground
- Garlic 2 cloves, minced
- Dried fruits ½ cup (such as cranberries, cherries, raisins, and apricots)
- Feta cheese ¼ cup, crumbled
- Sunflower seeds 2 tbsp
- Wonton strips a small handful to serve
Method
Cooking in a Cast Iron Pan
- Wash the head of broccoli thoroughly under cold water. Trim off any tough stems and cut the florets into bite-sized pieces. Use only the tender parts of the stalks.
- Heat olive oil in a large cast iron skillet over medium heat.
- Add minced garlic to the skillet and sauté for about 1 minute until it becomes fragrant and lightly golden.
- Add the broccoli florets to the pan. Add a pinch of salt and black pepper. Toss gently to coat the florets with the garlic-infused oil.
- Sauté the broccoli for about 2-3 minutes, stirring occasionally, until it becomes tender but still retains a slight crispness.
- Remove the broccoli from the pan and let it cool slightly.
- Sprinkle the dried fruits and crumbled feta cheese evenly over the pan fried broccoli.
- Gently toss the broccoli with the dried fruits and feta to ensure all the flavors are well combined.
- Serve with the sunflower seeds and wonton strips.
Baking the Broccoli
- Preheat your oven to 425°F (220°C). Place the broccoli florets on a baking sheet lined with parchment paper, ensuring they are spread out in a single layer.
- Drizzle the olive oil over the broccoli and season with salt and freshly ground black pepper to taste.
- Toss the broccoli gently to coat it evenly with the oil, salt, and pepper.
- Roast the broccoli for about 15-20 minutes or until the edges start to brown, and the florets become tender. Halfway through the cooking, give it a gentle stir to ensure even browning. Follow the rest of the recipe as above.
Notes
Remember that feta cheese is slightly salty, so use caution if adding any additional salt.
You can serve the dish warm, allowing the feta cheese to slightly melt over the sauted broccoli.
