Extra firm tofu first pan fried with a dry rub and then stir fried with homemade bbq sauce is as delicious as it sounds. The sauce is from the Homemade BBQ Sauce I made the other day for the pork. It works equally well for vegetarian recipes. @sarchakra

Ingredients:
- Extra firm tofu 14 oz (397 g)
- Oil for frying
- Spicy chili crisp to serve
Dry rub
- Brown sugar ½ cup
- Smoked paprika 2 tsp
- Red chili flakes 1 tsp
- Cayenne pepper 1 tsp
- Sea salt
- Black pepper 1 tsp
- Mustard powder 1 tsp
- Garlic powder 1 tsp
- Onion powder 1 tsp
- Rice flour 3 tbsp
The stir fry:
- Oil 1 tbsp
- Garlic 5-6 cloves, grated
- Red chili flakes 1 tsp
- Pearl onions a handful
- Carrots chopped into sticks ½ cup
- Tomato 1, chopped
- Sriracha 1 tbsp
- Green onions 2 tbsp, chopped at an angle
- Black pepper powder 1 tsp
- Basil 2 tbsp
- Garlic powder 1 tsp
- Homemade bbq sauce ½ cup (see Homemade BBQ Sauce )
The rice:
- Jasmine rice 1 cup
- Water 1 ½ cups
- White sesame seeds 2 tsp
- Black sesame seeds 1 tsp
- Toasted sesame oil 2 tbsp
Preparing the tofu:
Remove tofu from the packaging and discard the water. Wrap tofu in a kitchen towel. Place a heavy object on top and leave it for about 20 mins or so. Pat dry of any moisture is left. Cut tofu into cubes.
Preparing the pearl onions:
Heat a pan of water. Cut the top and end of each pearl onion. Drop them in the boiling water and cook for a minute. Immediately dump them into a bowl of cold water. The skin should come right off the pearl onions.
Preparing the rice:
Rinse jasmine rice. Put in the pressure cooker with 1 ½ cups of water. Cook for 1 whistle. Let the pressure release by itself. Serve on a plate. Pour toasted sesame oil on the rice and top with a sprinkle of black sesame seeds, white sesame seeds and chopped green onions. Keep aside.
The dry rub:
- In a bowl mix together the ingredients for the dry rub: brown sugar, paprika, onion powder, garlic powder, chili flakes, salt, black pepper, mustard powder and cayenne pepper. Mix in rice flour.
- Rub dry spice mix on the tofu cubes.
Stir fry:
- Heat oil. Fry tofu pieces in small batches till nicely charred all over. Remove and drain on kitchen towels.
- Remove all the oil except 1 tbsp. Sauté finely chopped garlic. Add pearl onions, chopped tomato, carrot sticks and red chili flakes. Stir fry on high heat.
- Pour in homemade bbq sauce. Put in black pepper powder, sriracha and garlic powder. Add in fried tofu. Mix gently. Garnish with chopped green onions and basil.
