If you’re looking for an easy dessert that’s wholesome, indulgent, effortlessly elegant and absolutely stunning, you need to make these Pistachio Chocolate Date Bars. The base is a chewy blend of sweet dates and honey roasted pistachios, followed by a creamy layer of pistachio cream, finished with a glossy coat of melted chocolate swirled with a touch of coconut oil. All that’s left is a sprinkle of some coconut chips, crushed rose petals, and more of those honey roasted pistachios. It is a perfect balance of sweet, nutty, and rich. They are almost too pretty to cut. Despite looking rather elaborate, there is no baking involved. I wouldn’t call these health bars because yes, they have dates but there is also pistachio cream and chocolate, so consume in moderation, as with most good things. Ingredients
- Dates 1 cup (pitted)
- Honey-toasted pistachios 1/2 cup (plus extra for topping)
- Pistachio cream ½ cup
- Coconut oil 1 tsp
- Melted chocolate 1 cup (dark or semi-sweet)
- Coconut chips, for topping
- Dried rose buds (crushed), for topping
Method
First Layer
- Blitz dates and honey-toasted pistachios in a food processor until sticky and crumbly.
- Press mixture evenly into a parchment-lined pan.
- Refrigerate until firm.
Second Layer
- Spread pistachio cream evenly over the hardened base.
- Return to fridge and allow to set.
Third Layer
- Melt the chocolate in the microwave in 30 sec increments with the coconut oil till it forms a smooth, homogeneous mixture. Pour the melted chocolate over the pistachio butter layer and spread smoothly.
- Immediately sprinkle crushed rose buds, coconut chips, and extra honey-toasted pistachios on top.
- Refrigerate until completely hardened.
To Serve
Cut into squares or bars. Keep refrigerated until ready to eat.
Notes
For a healthy version, swap the pistachio cream for raw or roasted pistachio butter (unsweetened). Use dark chocolate with 70%+ cocoa instead of milk chocolate, or just drizzle a little instead of fully coating. Keep the dates and toasted pistachios in the base as they are already giving natural sweetness, fiber, and healthy fats. The end result stays indulgent and nutty but much lower in added sugar.
