I’ve really simplified this recipe so it does not involve hours of cooking the milk down to a creamy thickness. Instead regular pantry items are used to create this luscious and creamy dessert. PREP TIME: 10 mins plus freezing overnight

COOK TIME: 0

YIELDS: Serves 6

Ingredients

  • Mango purée/pulp 1 cup
  • Cream 1 cup
  • Condensed milk 1 can
  • White bread 3, remove sides and grind into a fine powder
  • Evaporated milk 1 can
  • Cardamom powder 1 tsp
  • Rose water 2 tsp
  • Saffron a pinch (ground and dissolved in 1 tbsp of water)
  • Pistachios a small handful, chopped finely
  • Rose petals 2 tbsp, crushed

Method

  • Whisk the cream till peaks form. Fold in the evaporated milk, rose water, mango purée, cardamom powder, ground bread, condensed milk, saffron and half of the chopped pistachios and rose petals. Gently mix to incorporate.
  • Pour the mixture in a freezer safe container. Sprinkle the rest of the chopped pistachios and rose petals. Cover and freeze for 6-8 hours or overnight till fully set.
  • Let the Mango Kulfi sit on the countertop for 5 mins before scooping and serving.

Notes

Mango Kulfi Popsicles: Pour the mango kulfi mixture into popsicle molds and freeze for a fun and portable treat.

Layered Mango Kulfi: Create layers of mango kulfi and crushed cookies or cake crumbs in glasses for an elegant dessert parfait.
