Easy Peach Cobbler

This is a foolproof cheat version of a traditional Peach Cobbler using boxed cake mix. With the amount of desserts I do in a year in our household, where I am the only one who does not have a sweet tooth, boxed cake mixes can be very convenient. When you’re short on time, it can significantly speed up the baking process. If you are new to baking or don’t have much experience, boxed cake mixes are a straightforward and user-friendly option too. The instructions on the box are usually easy to follow, making it accessible for beginners to achieve good results and you can tweak the recipe to suit your needs. Boxed mixes also typically require minimal preparation and saves you the time needed for measuring and combining individual dry ingredients. Be aware though, that they do contain preservatives and additives. If you have dietary restrictions or preferences, you may need to consider homemade recipes to have better control over the ingredients used. YIELDS: Serves 6

Ingredients

  • Canned peaches 2
  • Cake mix 1
  • Butter 1 stick, cut into cubes plus for coating
  • Cinnamon 2 tsp
  • Nutmeg 1 tsp
  • Flour 1 cup
  • Brown sugar ½ cup

Method

  • Preheat oven to 350°F.
  • Add half of the brown sugar to the peaches. Let them sit for about 10-15 minutes to release their juices.
  • In a bowl mix cinnamon, nutmeg, flour and the rest of the brown sugar.
  • Butter a pan on the bottom and all sides. Pour the canned peaches in the pan.
  • Sprinkle the cake mix on top of the peaches. Do not mix.
  • Place the cubed butter on the top distributing it evenly.
  • Add the flour and brown sugar mixture.
  • Bake in the oven for 25-30 mins till the cobbler is bubbling and golden.
  • Let it cool slightly before serving. Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream or if you are like me, you won’t need anything else with it!

Notes

Mix chopped pecans or walnuts into the cake mix for added texture. Alternatively, sprinkle granola on top before baking for a delightful crunch.

Incorporate the zest of an orange or lemon into the peach mixture for a zesty, fragrant twist.

Add a touch of fresh thyme or basil to the peach mixture for a subtle herbal note that complements the sweetness.

After baking, drizzle warm caramel sauce or honey over the cobbler for an extra touch of indulgence.

Bake the cobbler in individual ramekins for an elegant presentation, serving each person their mini peach cobbler.
