Ingredients
- Watermelon rind- 2 cups
- Lemon 1, cut into small cubes
- Cinnamon sticks 2
- Cloves a few
- Sugar ½ cup
Method
- Cut the green part and thinly slice the rinds.
- In a pan add 2 cups of water and the watermelon rinds. Let it come to a boil. Turn the heat down and simmer for 5-6 mins.
- Use a strainer to take the rind pieces out. Reserve it for later.
- Add sugar to the simmering water. Let the sugar melt before adding lemon cubes, cloves and cinnamon sticks. Add the watermelon rinds back onto the water.
- Simmer for 10-15 mins till the mixture gets thicker and the lemon and watermelon softens. Cool completely.
- Store in a bottle and keep it refrigerated. Serve in a shot glass or add in carbonated water to serve.
