YIELDS: Serves 2

Ingredients

  • Green leaf lettuce 1 package (142g)
  • Onion 1 small, thinly sliced
  • Blueberries a handful
  • Walnut halves a handful
  • Strawberries a handful, cut into quarters
  • Crumbled feta cheese ¼ cup

Dressing

  • Honey ¼ cup
  • Extra virgin olive oil 3 tbsp
  • Black pepper 2 tsp, cracked
  • Lemon juice 4 tbsp
  • Salt to taste
  • Pomegranate flavored vinegar 1 tbsp
  • Aged balsamic vinegar ¼ cup

Method

  • In a pan add the honey and balsamic and simmer for a few minutes till thickened.
  • To that add the extra virgin olive oil, lemon juice, salt, pomegranate flavored vinegar, and cracked black pepper.
  • In a large salad bowl add greens, sliced onions, strawberries, blueberries, crumbled feta, walnut halves.

Notes

Mixed greens has a combination of red leaf lettuce , Mixuna , Tango, Spinach, Red oak, Red chard, Lolla Rosa and Radicchio.
