Ciabatta Bread Pizzas

Ciabatta Bread Pizza is the answer to your prayers when you do not have the time to make a pizza from scratch and it is also healthier. Add as many or as much vegetables you want or for a non vegetarian option, top it with some shredded rotisserie chicken. The marinara sauce I’ve used here works equally well for pasta, sandwiches and wraps. It freezes pretty well too so if you’re meal prepping, go ahead and do the marinara in bulk for a multitude of uses alter ingredients @sarchakra

Ingredients

  • Ciabatta bread 1, large
  • Olive oil for drizzle
  • Marinara sauce (see below)
  • Red pepper flakes crushed as desired
  • Pickled jalapeños a few
  • Red bell pepper diced ½ cup
  • Green bell pepper diced ½ cup
  • Red onion diced ½ cup
  • Black pepper 1 tsp
  • Sea salt
  • Mozzarella shredded ½ cup
  • Provolone shredded ½ cup
  • Marinara sauce
  • Tomato sauce 15oz
  • Black pepper 1 tsp
  • Sea salt 1 tsp
  • Garlic powder 1 tsp
  • Onion powder 2 tsp
  • Red chili flakes a pinch
  • Olive oil 1 tbsp
  • Oregano 1 tsp

Method

  • Heat the oven to 400°F.
  • Heat olive oil. Pour in the tomato sauce. Season with salt, pepper, red chili flakes garlic powder, onion powder and oregano. Bring to a boil and simmer for 3-4 mins. Turn the heat off. Let it cool. Marinara sauce is ready.
  • Cut ciabatta into half. Slice each half midway to form 4 pieces. Place ciabatta on a oven proof tray seasoned with olive oil. Drizzle olive oil on the ciabatta. Top with marinara sauce.
  • Top the ciabatta with grated mozzarella and provolone cheese. Top with red bell pepper, green bell pepper, onions, pickled jalapeños. Sprinkle with black paper, sea salt, red pepper flakes and oregano.
  • Cook the ciabatta in the oven for 10-12 minutes till the cheese has melted and the bread becomes golden. Serve drizzled with some more olive oil.

Notes

You can most certainly add as much cheese as you want if you like a ‘cheesier’ pizza . I wanted this to be a light and healthier pizza so I did not use too much cheese.

Store any leftover marinara sauce in the fridge. Use it in pasta, sandwiches or pizzas.
