Beet er Saag

This is a good way to use up the greens that come with the organic beets you buy from your local farmers market or grocery. I can’t believe when I first started cooking I used to actually throw those away! Well not anymore πŸ™‚ @sarchakra

PREP TIME: 15 mins

COOK TIME: 20 mins

YIELDS: Serves 4

Ingredients

  • Beet greens 1 bunch, chopped fine
  • Vegetable oil 1 tbsp
  • Dry red chilies 2
  • Salt to taste
  • Turmeric 2 tsp
  • Nigella seeds 2 tsp
  • Sugar 2 tsp
  • Flour 1 tbsp

Method

  • Heat oil. Add dry red chilies and nigella seeds. Let it turn aromatic. Add chopped beet greens. Keep the heat high till all the moisture is released.
  • When the mixture becomes dry, add half a cup of water. Season with salt and turmeric. Cover and cook till done.
  • Add sugar and flour. Turn the heat to high. Cook the mixture to a desired consistency.

Notes

It is really important to take time washing the greens thoroughly of all grime and dirt several times changing the water.
