Angel hair pasta cooks really quickly and it incorporates into any sauce wonderfully. I find I cook with angel hair pasta a lot these days. This is a quick and yummy pasta dish. This one uses Australian ground lamb which is so tender, it cooks within minutes @sarchakra

COOK TIME: 20 mins

Ingredients
- Lamb ground 8 oz
- Bay leaf 1, broken
- Olive oil 2 tbsp
- Onion 1, chopped
- Garlic 3 cloves, chopped
- Thyme 2 tsp
- Salt
- Sugar 1 tsp
- Black pepper 1 tbsp
- Tomato paste 1 tbsp
- Olive oil for drizzle
Ingredients
- Heat olive oil. Sauté bay leaf, garlic and onions. Let the onions turn translucent before adding lamb mince.
- Meanwhile in another pan, set water to boil. When the water comes to a boil add salt and the angel hair pasta. Boil for 3 mins. Drain the pasta reserving ½ cup of pasta water.
- When the lamb has cooked for about 5 mins add salt, pepper and thyme. Add tomato paste and sugar. Simmer till the lamb is done for about 10 mins.
- Add the drained pasta along with the reserved pasta water and mix. Check seasoning. Serve with a generous drizzle of olive oil.
